Safflower or Carthamus tinctorius is an herbaceous, thistle-like plant cultivated commercially to supply safflower oil within the seeds from the vegetation. The oil has the same texture and taste to sunflower oil. Additionally, it tolerates substantial warmth, that makes it well suited for cooking.
